Okay so I've now cooked a few variations of hummus pasta, which by the way, is soooo good! Who knew?!
Because I've become obsessed, I thought I'd try a boujee take on this healthier, creamy pasta- hummus truffle pasta with our limited edition Oh la la Truffle hummus. It's super easy to throw together and if you want to make it extra boujee, drizzle some good truffle oil and top with sliced truffles (you can find some pretty affordable truffles on amazon!)
As we say in Arabic, sahtain! (enjoy)
Ingredients
- 1-2 tablespoons EVOO
- 1/2 cup sliced mushrooms
- 1-2 garlic cloves, minced
- 3 Tablespoons Baba's Oh la la Truffle Hummus
- 1/4 cup water
- Sprinkle of salt
- 1 pound pasta (spaghetti or linguini)
- Handful of crumbled goat or shredded parmesan cheese
- Drizzle of truffle oil (optional)
- Sliced truffles (optional)
Directions
Step 1: Cook your pasta in salted, boiling water according to the packaging instructions.
Step 2: Add EVOO to a medium size pan over medium-high heat.
Step 3: Add mushrooms, garlic and salt. Saute for 5-8 minutes until mushrooms are cooked. Remove and set aside.
Step 4: Add hummus, water and a sprinkle of salt to the same pan.
Step 5: Whisk all ingredients together until sauce is creamy. Adjust seasonings to your liking.
