Cheese curds. Corn on the cob. Hummus bowls?! We launched our Modern Middle Eastern airstream at the great Minnesota get together this year and it was wild!
With 12 days to make a splash, we were blown away with all the support and love from our community from the get-go! WCCO morning news anchor, food critic and foodie extraordinaire Jason DeRusha picked Baba’s as the #1 fair food! Four-time James Beard award winner and TV personality chef Andrew Zimmern called our falafelicious bowl ‘the best version of modern fair food” that he’s had at a festival of any kind in long time. AHHHH *pinch us*!

Dara Moskowitz Grumdahl aka Dear Dara from Mpls.St. Paul Magazine named us as a top new vendor (#2 pick). The Minnesota State Fair awarded us one of the best vendors of 2021. WOW! We could not have dreamt up a better debut!
Growing up, my siblings and I would attend the State Fair with our family year after year. Each visit, we would dream about how cool it would be to one day have our own spot there. Fast forward to 2021, in the middle of a global pandemic, in the middle of getting ready to launch with Whole Foods, we applied to be a vendor at the Minnesota State Fair. Why not, right?! We found out we were chosen as a new vendor at the end of June, giving us limited time to prep. In just 7 weeks leading up to the fair, we bought an awesome airstream, revamped it into a functional food truck and wrapped it into the cutest design reflecting our playful and modern brand identity.
The menu featured a variety of fun and contemporary hummus bowls to reflect both our Palestinian and American heritage.
Fan favorites were the Falafelicious, with our creamy, dreamy hummus, crispy falafel, warm chickpeas, pickled cabbage, pickles, tahini and sumac.

Hummus bi lahme, which translates to 'hummus with meat' in Arabic. Our creamy, dreamy hummus is topped with shawarma spiced minced beef, almonds, parsley, lemon sauce and sumac.

Oh, and the Dill and Curd- what could be more Minnesotan than cheese curds and dill pickle hummus?! This was our homage to our home state and it was a hit!

If y’all are trying to get halal and kosher certified why would you add bacon to your menu? I was really excited to try your food too as there aren’t many halal options at the fair.
